Assessment Guidance

Workplace assessment of occupational competence is required. This must be carried out in line with the guidance available from the Learning Provider’s section of Skillsmart Retail’s website (www.skillsmartretail.com). The guidance consists of: Assessment Principles; a booklet containing assessment guidance for each unit; and a list of some agreed equivalences between previous and current versions of units.

    Assess whether glazed, coated or decorated bake-off products:

    • meet the organisation’s specification
    • are correctly positioned for the next stage in the bakery process

    Apply organisational procedures for dealing with finished bake-off products that fail to meet the product specification.

  • 2.5

    Produce glazed, coated or decorated bake-off products:

    • to the amount required
    • within an allocated time
    • with a minimum of waste
